Breakfast
Cheesecake
Clean kitchen
Sweep kitchen floor
Vegetable Spaghetti for lunch
Clean kitchen
Wash and dry 3 loads of laundry
Fold two loads of laundry
Three berry topping for cheesecake
Carmel topping for Turtle cheesecake
Dinner in Hudsonville for my cousin's last day in the Military!

My Laundry Folding Station:
That table was full by the time I was done. Notice the kid with his pajamas half on. He's mine.

Small Cheesecake
Crust
1 C graham cracher crumbs
1/2 stick butter, melted
2 T sugar
Combine and press into a buttered 9" pie plate.
Bake for about 5-10 minutes while you make filling.
Filling
8 oz package cream cheese, softened
1/2 C sugar
1 T lemon juice
1/2 t vanilla extract
dash salt
                                                                                    2 eggs
Beat cream cheese and sugar on medium speed
until fluffy. Beat in lemon juice, valilla and salt.
Add eggs, one at a time, mixing until just
combined after each addition.
Pour into crust. Bake @325 for 25 minutes
or until set. Spread with topping.
Topping
1 C sour cream
2 T sugar
1/2 t vanilla
(I added a few crushed raspberries and substitutes plain yogurt for sour cream)
Combine and spread over the top of the hot
cheesecake. Return to the oven and bake another 10 minutes. Cool on wire rack for 1 hour then chill
for at least 2 hours. Store in refrigerator.

Fruit Topping
Fresh or frozen Strawberries, Blueberries, Raspberries
Lime
2 T sugar
Put berries and sugar in small saucepan. Smash the berries and mix. Heat on medium high until their is foam on the top. Spoon off the foam. Squeze in lime juice and a bit of the flesh. Heat another few minutes on low, spooning off any foam that rises up. Cool in fridge. Scoop on pieces when served.
