Taco Soup
Ingredients:
1 lb burger (use turkey burger if you're going for healthy)
1 packet taco seasoning
... 1 can black beans (or other; can use 2 if you don't do meat)
2 cans corn
2 cans diced tomato
cheese, sour cream, and tortilla chips optional

Directions:

R&R with the family
Yay
For lunch, I gave John mixed Veggies. He refused to eat them and threw them on the floor, so I separated them to see what would happen. After that, he ate all of the carrots and bread first, then the corn, and wouldn't touch the peas or beans. Apparently my son has something against green people....

Saturday. Ahh. I love Saturdays. I don't have to feel guilty about not doing anything because Eric is home and I know that he isn't doing anything either.
This is how a typical Saturday goes.
8:00am John wakes up. Eric does not. I nurse John and lay on the bed in his room while he plays for about an hour.
9:00am John and I eat breakfast. Today was pancakes and banana.
9:30am John starts to get tired, we play for a while, read a book or two, and hang out.
10:00am Eric's phone rings for some reason or another so he wakes up. We go in and I lay by him while John excitedly crawls all over our bed, smacking our faces, talking up a storm, or playing peek-a-boo under the covers. Then we read another book or play some more.
11:00am Put John down for a nap; Eric and I hang out, talk, or do whatever we want :) Then Eric takes another nap.
12:00pm John wakes up. Today Eric showered while I worked out (if you can call it that. I only do one.five reps of this: http://www.youtube.com/watch?v=o2dbyiSwuCc because I get tired halfway through the second one.) John and Sam watched me like I was a crazy person. Then I showered.
1:00pm Nurse John.
1:30pm Eat lunch. (Brats on the George Foreman). Straighten the kitchen.
2:00pm Make a pot of coffee. Get out some leftover cheesecake. Eric reads a book. John plays with his toys. Sam chews his bone. Talk one the phone to a faraway relative or friend (today was Shupe).
3:00pm Read a story to John, lay him down for a nap. Eric takes a nap. I blog or browse the book of faces.
4:30pm John wakes up. Eric does not. I realize its Saturday and I know I won't want to do anything on Sunday, so I powerclean the kitchen (including polishing the stainless steel, scrubbing the stovetop, wiping out the microwave, and washing those dishes that I haven't done the last two days) and finish folding the laundry while John plays with his car. Eric helps out when he wakes up.
6:00pm Feed John peas for dinner, nurse, bathe, read, and put him to bed.
7:30pm Eric makes us dinner: popcorn! and we go downstairs to watch a movie, play a game, or hang out until bedtime.

I forgot to post what I did yesterday, which would make you think that it must have been a busy day and that I got a lot done. Not the case. Now I can't remember what I actually did, but heres a rough breakdown.
- Stay up until 2:00am because my husband (who stayed home sick and slept the whole day before) was staying up meaning that I couldn't sleep.
- Lame-o breakfast. Cheereos or something.
- Fold a little bit of laundry (still sitting on the kitchen table)
- Take a nap while John takes a nap because I was exhausted.
- Cut up a Canteloupe, feed some to John
- Clean a little bit of the kitchen (still not done)
- Make some mac-n-cheese for lunch. Feel guilty about eating so unhealthily so I get out more canteloupe.
- Try to clean up some toys, but gave up after John dumped out the blocks I picked up four times.
- Go for a walk. That made John happy.
- Finish 3 of 6 training modules on the computer that I was supposed to do in January, but now have to do because I have the training meeting to approve me for substitute teaching in Kent County next week. I was supposed to go to the meeting in January too, but ironically I was actually already subbing in Kent County, so I had to put it off.
- Tried to put John down for a nap, didn't happen.
- Julia and Brad came over; John was cranky so I fed him more melon.
- Tried to put John down for a nap again, didn't happen again.
- Finally gave up and nursed John to sleep and didn't move so he would stay asleep. I stayed still for 20 minutes and then wiggled a teeny bit. He only slept for 20 minutes.
- Supper: threw in a casserole that I made earlier in the week.
- Put John to bed, fell asleep on the couch, and went to bed at 8:00.

Small Cheesecake
1 C graham cracher crumbs
1/2 stick butter, melted
2 T sugar
Combine and press into a buttered 9" pie plate.
Bake for about 5-10 minutes while you make filling.
Filling
8 oz package cream cheese, softened
1/2 C sugar
1 T lemon juice
1/2 t vanilla extract
dash salt
2 eggs
until fluffy. Beat in lemon juice, valilla and salt.
Add eggs, one at a time, mixing until just
combined after each addition.
Pour into crust. Bake @325 for 25 minutes
or until set. Spread with topping.
Topping
1 C sour cream
2 T sugar
1/2 t vanilla
(I added a few crushed raspberries and substitutes plain yogurt for sour cream)
Combine and spread over the top of the hot
cheesecake. Return to the oven and bake another 10 minutes. Cool on wire rack for 1 hour then chill
for at least 2 hours. Store in refrigerator.

Fresh or frozen Strawberries, Blueberries, Raspberries
Lime
2 T sugar
Put berries and sugar in small saucepan. Smash the berries and mix. Heat on medium high until their is foam on the top. Spoon off the foam. Squeze in lime juice and a bit of the flesh. Heat another few minutes on low, spooning off any foam that rises up. Cool in fridge. Scoop on pieces when served.

24 OREO Cookies, finely crushed (about 2 cups)
6 Tbsp. butter or margarine, melted
1 pkg. (14 oz.) KRAFT Caramels
1/2 cup milk
1 cup chopped PLANTERS Pecans
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup sugar
1 Tbsp. vanilla
3 eggs
2 oz. BAKER'S Semi-Sweet Chocolate
1/2 cup milk

MICROWAVE caramels and milk in small microwaveable bowl on HIGH 3 min. or until caramels are completely melted, stirring after each minute. Stir in nuts; pour half into crust. Refrigerate 10 min. Refrigerate remaining caramel mixture for later use.

Today I:

Red Pepper, Mushroom, Spinach Frittata
* 8 large eggs
* 1/2 cup finely diced red onion
* 2 garlic cloves, minced
* 1/2 red bell pepper, diced
* 1 cup sliced baby bella mushrooms
* 4 cups baby spinach
* 1/2 cup goat cheese crumbles
* 1/4 cup parsley, roughly chopped
* 1/4 cup basil, roughy chopped
* 2 Tbs. extra-virgin olive oil
* 1/2 tsp coarse salt
* 1/2 tsp freshly ground pepper
* parmesan shavings for garnish
In a large bowl, whisk together the eggs, a pinch of salt, pepper, basil and parsley.
Heat the oil in a medium skillet over medium-high. Add the onions and saute 3 minutes. Add the garlic and red bell pepper; saute 3 more minutes. Add the mushrooms and saute 3 more minutes. Add the spinach to wilt. Add a pinch of salt and pepper.
Pour the egg mixture over the sautéed veggies, until it has covered the whole skillet. Add the goat cheese and let eggs cook for a good 4 minutes, then move the skillet to the oven and let it sit under the broiler for a few more minutes, until the eggs are cooked and set.
Let cool 3 minutes, garnish with parmesan, slice and serve!
Broasted Potatoes (My dad's recipe)
*Potatoes
*1/2 cup oil
*2 tbsp Parmesean cheese
*1 tsp salt
*1/2 tsp paprika
*1/2 tsp garlic powder
*1/4 tsp black pepper
Wash Potatoes. Cut into wedges. Arrange on baking sheet (skin side down).
Mix together oil, cheese, and spices. Brush spice mixture onto potatoes.
Bake at 375 for 45 minutes. Brush spices/oil on a few times while baking.
(today, I cut the potatoes into small squares, tossed them with the spice mixture, and spread them in an even layer over the bottom of a large glass pan)

1. Woke up to hear squeals of delight from my baby as he played in his crib.
2. Made breakfast: oatmeal with strawberries and raspberries.
3. Showered with my kiddo.
4. Met a friend (found out she's trying to recruit me to a pyramid scheme)
5. Did "lunch bunch" at The Potter's House
6. Brought Eric his keys at work.
7. Mailed 4 letters and 1 package at the post office.
8. Got gas in the van; washed the windows.
9. Made dinner (tuna noodle casserole) PLUS an extra for another day this week.
10. Cleaned the kitchen (including dinner dishes)
11. Kept my kid alive, my house clean, my husband happy, and myself sane.

I'm pretty new to this whole stay-at-home-mom bit, but I can already tell you that it can keep me as busy as any job I've ever had.
Last week was my first week at home with John and I had grand ideas about what I could get done during the week. However, by the time the weekend hit, I realized that I had barely completed anything on my mental to-do list.
Feeling incredibly unproductive and slightly depressed, I came up with a job chart to keep me accountable and to keep track of what I actually get done, but as I was about to hang it on the fridge, I started to feel like a nine-year-old again.
So rather than putting an X through each job I complete and saving up ten cents at a time, I am just going to make a page for it. So, here I will keep track of what I do each day. Maybe I'll even post a picture or two if I complete a note-worthy task. Don't expect anything fancy... I'm just trying to stay sane here.
Last week was my first week at home with John and I had grand ideas about what I could get done during the week. However, by the time the weekend hit, I realized that I had barely completed anything on my mental to-do list.
Feeling incredibly unproductive and slightly depressed, I came up with a job chart to keep me accountable and to keep track of what I actually get done, but as I was about to hang it on the fridge, I started to feel like a nine-year-old again.
So rather than putting an X through each job I complete and saving up ten cents at a time, I am just going to make a page for it. So, here I will keep track of what I do each day. Maybe I'll even post a picture or two if I complete a note-worthy task. Don't expect anything fancy... I'm just trying to stay sane here.
